At my farm, in Bedford I grow several varieties of edible rhubarb. Just a few plants will provide plenty of this unusual and delicious vegetable to use during the season, plus enough to freeze for later in the year. Because rhubarb is very easy to grow and because the plants are readily available, I encourage you to find a place in your garden for it. The rewards in the kitchen will be well worth it.
I’ve just harvested the last of the rhubarb for the season and I will be making one of my favorite desserts, rhubarb upside-down cake. What’s your favorite rhubarb recipe?
